Kimchi cravings quenched!

Whether Kheedim Oh is revving up the crowds with his band, the Beatards, or concocting kickin’ kimchi for his Brooklyn-based brand, Mamma O’s Premium Kimchee, it’s pretty much a guarantee that he’s keeping life lively.

Mama O’s is based on a family recipe, Oh says. But being a New York-kinda guy, it became impossible to travel more than 200 miles to his parent’s place in Maryland every time he got a craving.

“So I went down and visited once a month to make my personal stash,” Oh said. “I would give it to my friends and they all told me that it was ‘SO good! Dude you need to sell this!’"

About a year ago, Jeffery of Jeffery’s Meat Market offered to carry Oh’s Korean delicacy. New Yorkers have been fired up ever since about getting their hands on Mama O’s at local stores and food fairs. (Find it at The Brooklyn Flea, The New Amsterdam Market, or a smattering of stores in Brooklyn.)

Oh calls himself a self-proclaimed kimchi snob, and he says his mom takes it as a compliment that he named his company after her. “I think I am making it up to her for being such a troublemaker growing up,” Oh said. “Now I am the perfect Korean son, honoring his mom and her kimchi recipe and kimchi making philosophy.”

Try these Mama O’s-approved ideas on how kimchi can compliment your next meal:
- Bolster cubano sandwiches by using kimchi instead of pickles to “take it to the next level.”
- Top onion bagels with cream cheese, bulgogi and kimchi for a savory snack.
- Mix up kimchi salsa by replacing jalepenos with diced pieces of kimchi and daikon kimchi.
